Maple Dijon Salmon: An Easy 20-Minute Weeknight Dinner
This maple Dijon salmon recipe is for when you want a weeknight dinner that’s high protein, tastes delicious and couldn’t be easier to make. The glaze calls for three things you almost certainly already have in your kitchen – maple syrup, Dijon and olive oil – so the only thing you have to buy is a piece of salmon. It’s also ready from start to finish in about twenty minutes.
Maple Dijon Salmon
Serves 4
5 minutes of prep – about 15 minutes in the oven
Ingredients:
4 salmon fillets (6 to 8 ounces each), skin and bones removed
kosher salt
4 tablespoons maple syrup (look for 100% pure maple syrup)
4 tablespoons Dijon mustard
2 tablespoons olive oil
Directions:
Preheat oven to 400-degrees F. Line a baking sheet with aluminum foil and spray generously with non-stick cooking spray.
In a small bowl, whisk together the Dijon, maple syrup and olive oil.
Season the salmon with kosher salt.
Brush the salmon with the maple mixture, covering the tops and sides. Reserve any extra sauce.
Bake for 10 to 12 minutes, until the salmon flakes easily with a fork.
Remove the baking sheet from the oven. Turn the oven to broil.
Spoon the remaining reserved sauce over the salmon and return to oven to broil until the top begins to brown, about 1 to 2 minutes.
Serve hot, or store leftovers in the fridge for up to 3 days.
Notes:
How you prepare the baking sheet is important. Use aluminum foil sprayed with nonstick cooking spray – this will keep the salmon from sticking to the pan and make clean up easier. Aluminum foil is better than parchment paper because of the broil step; parchment can burn.
The broil step is optional. You can skip steps 6 & 7 for an even easier version of this recipe! If you are broiling, stay at the oven while it broils and watch it closely to make sure the salmon doesn’t burn.
If your kids are helping, they’ll love brushing the salmon with the glaze!
Serve the salmon with any sides you like – such as rice and a roasted vegetable.
