Easy Holiday Chocolate Bark

Chocolate bark is a dessert you can genuinely feel good about. It’s delicious, easy and made with ingredients that are good for you – dark chocolate, nuts, seeds, and unsweetened dried fruit. It makes a thoughtful homemade holiday gift and is fun to bring to gatherings. Because the process is so easy, kids can help with just about every step, too. This wholesome treat is very much in the Easyfeast spirit.

Ingredients:

  • 3 (8 ounce) bags of high-quality chocolate chips (any type; we like Just Date brand because it has no added sugar)

  • ½ cup pecans and/or almonds, roughly chopped

  • 2 tablespoons pumpkin seeds

  • 2 tablespoons unsweetened dried cranberries

Directions:

  1. Preheat the oven to 350°F. Spread nuts/seeds on a baking sheet and toast for 8 minutes.

  2. Meanwhile, melt the chocolate in a microwave-safe bowl in 30-second increments, stirring after each one. Stop when the chocolate is mostly (but not fully) melted, and keep stirring until smooth.

  3. Line a baking sheet with parchment paper. Spread the melted chocolate evenly over the lined baking sheet to about ¼-inch thickness.

  4. Sprinkle the toasted nuts and seeds evenly over the chocolate. Then top with the dried fruit. Gently press to help them stick.

  5. Chill in the fridge until fully hardened, about 30 minutes to 1 hour.

  6. Break into pieces and enjoy!

Notes:

  • These can be stored in an airtight container in the fridge for up to 2 weeks.

  • Any of the toppings can be swapped. For a fun, kid-friendly version consider toppings like chopped leftover halloween candy, crushed candy canes, pretzels, m&ms, marshmallows and/or sprinkles.
