The Marinade You'll Use All Summer Long
This easy marinade is a summer favorite, and we hope you'll love it too.
It works on just about anything you grill - chicken, steak, tofu - and uses simple ingredients you may already have. With Father's Day and a summer of cookouts ahead, it's a good one to keep on hand.
Here it is:
1/4 cup soy sauce (or tamari)
1/4 cup avocado oil
2 tablespoons rice vinegar
2 teaspoons fish sauce (can omit)
2 tablespoons coconut sugar
2 teaspoons grated garlic
1 teaspoon grated ginger
Whisk it together. Pour it over 2 pounds of whatever you're cooking. Let it sit 30 minutes on the counter, or up to overnight in the fridge. When you're ready to cook, pat it dry and salt the protein before it hits the heat - then grill or sear.
A few ways we like to use this marinade through the summer:
· Grilled chicken thighs over rice with cucumbers
· Flank steak, sliced thin against the grain
· Tofu, pressed and roasted until the edges crisp
