Weeknight Veggie-Boosted Pizza
Feeds 4
Ingredients:
No-Cook Pizza Sauce
1 cup crushed San Marzano tomatoes (from a can)
1 (3.5 ounce) pouch vegetable-based baby food (optional)
2 tablespoons olive oil
½ teaspoon garlic powder
½ teaspoon kosher salt
Pizza Assembly
2 bags of store-bought pizza dough (1 pound each)
4 heaping cups of shredded low-moisture part-skim mozzarella
½ cup parmesan cheese, grated
Directions:
Make the pizza sauce: Whisk the sauce ingredients (crushed tomatoes, veggie pouch, olive oil, garlic powder and kosher salt) together in a bowl and set aside.
Preheat oven to 450-degrees. Line two baking sheets with parchment paper.
Lightly flour a clean surface. Cut each dough ball in half, then shape each piece into a 6 to 8 inch round. (You’ll end up with 4 individual pizzas.)
Transfer dough rounds to the prepared baking sheet and bake for 5 to 7 minutes, or until lightly golden at the edges.
Remove dough from oven and spread the prepared pizza sauce over each crust.
Sprinkle the mozzarella and parmesan evenly across each pizza.
Return to the oven and bake for 10-12 minutes, until the crust is golden brown and the cheese is bubbly.
Cool slightly, slice and enjoy!
